SHACK15 x Tim Wendelboe: Quality, sustainability, transparency

If you’ve been to SHACK15 in recent months, hopefully you’ve had a sip of Tim Wendelboe’s delectable coffee, served as a signature offering at the SHACK15 Cafe. We are honored to partner with Tim Wendelboe, a two-time world-champion barista and coffee roaster from Norway, for our coffee program. Wendelboe’s eponymous espresso bar, roastery and resource center in Oslo are known for their commitment to quality coffee, product knowledge and innovation. After 10 years in the coffee industry, Wendelboe, the 2004 World Barista Champion and 2005 World Cup Tasting Champion, decided to start his own business in 2007. The eponomyous Tim Wendelboe, quickly rose to prominence as one of the most-acclaimed roasteries in the world and now curates the coffee program for one of the best restaurants in the world, Noma in Copenhagen.

Now 10+ years and numerous accolades later, their goal is “to be among the best coffee roasters and espresso bars in the world and to be a preferred source for quality coffee, knowledge and innovation.” To achieve that goal, all of Wendelboe’s coffees are carefully sourced from their favorite origins based on a philosophy where quality, transparency, innovation and social responsibility is the main focus.
Each season, they sell a small range of coffees which are constantly changing to ensure the coffee is as fresh and delicious as possible. Rather than blending coffees together they showcase the vast difference of flavors that the world of coffee has to offer, allowing clients to taste of the terroir and the cultivar of each and every batch.

Wendelboe is a leader in the coffee industry in terms of transparency, regularly publishing the prices he pays for the coffee he uses, but equally important is his commitment to building long-term relationships with the farmers and cooperatives he purchases from. Through these relationships and by experimenting at Finca el Suelo, Wendelboe’s own coffee farm in Colombia, he has been able to explore the innovative method of using soil biology to grow coffee free from pesticides, which leads to a coffee of higher quality and taste, as well as lower cost and a production system that is more sustainable and safer for workers.
SHACK15 is the only place in California to sell Tim Wendelboe's coffee, and members and guests have the opportunity to taste some of his unique and experimental blends hailing from El Salvador, Honduras, Kenya and Colombia. Served in the same style as he does in his coffee shop in Oslo, these artfully-prepared coffees bring you the taste of Norway right here in San Francisco.
